Homemade Cinnamon Rolls

This recipe came about as I saw a recipe a good friend posted on their facebook. Using a can of biscuits to make your own homemade cinnamon rolls? Genius. Being able to have homemade gluten free cinnamon rolls? Even more amazing! For this one, I adjusted Nicole’s Cinnamon Bun Styled Biscuits for the biscuits portion.

Okay, lets go over the list of ingredients you will want on hand first:

1 Cup – All Purpose Gluten Free Flour
1/2 Teaspoon – Xanthan Gum
1/2 Teaspoon – Baking Powder
Few Dashes of Salt
2 Tablespoons – Cane Sugar
3 Tablespoon – Butter (chopped, chilled)
1 Egg White
1/4 Cup – Milk

Filling: (For lack of better term, that is what this will be called)

1/2 Cup – Maple Syrup
3 Tablespoons – Butter (melted)
1/3 Cup – Brown Sugar
Dash (or two) of Cinnamon

Making our biscuits:

  • Preheat the oven to 375 degrees.
  • In a medium bowl, add gluten free all purpose flour, xanthan gum, baking powder, salt, and cane sugar. Stir and make sure it is mixed well.
  • Using a fork, cut butter into pea size pieces. You will then press it into the dry mix. Evenly distribute throughout the dry mix)
  • Create a well, so you can add the wet ingredients. Add in milk and egg white. Mix until it resembles dough and is well mixed.

Let’s work on the filling now:

  • In a microwave safe bowl, mix the melted butter, maple syrup, and brown sugar
  • Using a casserole dish, pour the mix onto the casserole dish. You only want to add 1/2 of the mixture to the bottom of the casserole dish. Try and spread the mixture, so it will cover the bottom of the dish.

Forming our biscuits:

  • Cup some dough in your hand, and form biscuits. (you can use a circular cookie cutter if you want…). You just want them to be in a disc shape and medium in size. Strategically place them in the casserole dish.

Finishing our cinnamon rolls:

  • Pour remaining of melted butter/brown sugar mixture over the biscuits.
  • Place them in the oven for 25 minutes.

Once they are done:

  • Allow them to cool before beginning to enjoy them.
  • Place unused cinnamon rolls in a freezer safe bag, to enjoy later.
